In a saucepan, combine 225g of whole milk, 225g of whipping cream, and vanilla, bringing the mixture to a simmer to create a custard base. In a separate bowl, whisk together 3 eggs, 20g of sugar, and a teaspoon of cinnamon. Gradually add the warm custard mixture to the egg mixture to temper it. Next, pour this combined custard over the chopped croissants in a baking dish, allowing it to soak for 15 minutes. Bake at 360°F for about 30 minutes or until the top is golden brown. Once baked, serve the bread pudding topped with whipped cream, fresh raspberries, and a drizzle of maple syrup.
